Avocado Sandwich (Lemon + Lettuce)

This avocado sandwich is the fast one: toasted bread, smashed avocado, a squeeze of lemon juice, and crunchy lettuce. It takes about 10 minutes and saves you from eating “whatever is in the fridge” with a spoon.

Instructions

1) Toast the bread

Toast the bread until it’s warm and golden. If you like it crunchy, go a little longer — just don’t forget it and create charcoal toast (I’ve done it. The smoke alarm was very proud).

Toaster setting: medium
Time: about 2–4 minutes

2) Prep the avocado

On a cutting board, cut the avocado, remove the pit, and scoop it into a mixing bowl. Keep it simple and safe — please don’t try to karate-chop the pit out like a cooking show. Your hand will not clap back.

3) Smash and season

Mash the avocado with lemon juice and salt until it’s creamy but still a little chunky. Taste it. Add another pinch of salt if it’s bland — I once “skipped salt” and my sandwich tasted like sadness on bread.

Lemon juice: about 1–2 tsp per avocado
Salt: start with a pinch

4) Build the sandwich

Spread the avocado mix on bread. Pile on lettuce (as much as you can fit without it exploding out the sides). Close it up and press lightly so it’s together but not squished like a sad desk lunch.

5) Serve right away

Slice the sandwich with a knife if you want it neat. Eat it right away — avocado waits for nobody and will turn that not-cute brown if you wander off to scroll your phone “for one minute.”

lightbulb_2 Tips

Pro tip: Want it less slippery? Toast the bread a little more. The extra crunch keeps the avocado from turning your sandwich into a sliding puzzle.

Common mistake: Too much lemon juice can make the avocado taste sharp and watery. Start small, taste, then add more. This is a sandwich, not a science fair volcano.

Pro tip: If your avocado is under-ripe and fights back when you mash it, chop it smaller first and add a tiny extra pinch of salt. Or… pretend you meant it to be chunky.

Common mistake: Don’t put the lettuce on the cutting board and walk away. It will wilt like it’s auditioning for a sad salad commercial. Build and eat.

Swap table: If you’re missing something, here’s what works.

Missing Use instead Notes
Bread tortilla or lavash Roll it up. Less mess. More portable.
Lemon juice lime juice or rice vinegar Lime is brighter. Vinegar is milder — go easy.
Lettuce arugula or spinach Arugula is peppery. Spinach is soft and easy.
