What to Do
- Grab a bowl. Crack in the eggs. Add a good pinch of salt and pepper. Beat it all up with a fork until it looks mixed.
- Heat up your frying pan over medium heat. Drop in the bacon. Cook until it looks crispy. I usually like mine a little browned. Take the bacon out. If there’s a lot of bacon fat, you can scoop some out but leave a little in the pan.
- Pour the eggs into that same pan. Give the pan a little shake so they spread out. Let it sit for about 1 minute, just so the bottom sets.
- Sprinkle the cooked bacon back on top. If you want, add shredded cheese too. Cook for another 1 to 2 minutes. You can use a spatula to lift the edge and let some raw egg slide underneath so it cooks up soft and fluffy.
- Once the eggs are mostly set (not too runny), fold the omelette in half. I just use the spatula and flip one side over. Give it another 30 seconds if you want it cooked more, then slide it onto a plate.
That’s it. Eat it hot!
lightbulb_2 Tips
- If you don’t have bacon, use ham or even sausage bits. Works great.
- Don’t crank the heat too high or the eggs can go rubbery. Medium works best.
- If you’re feeling fancy, throw in onions or a handful of spinach before adding eggs.
- Cheese is optional but really tasty.
- If you mess up the folding, just call it “scrambled omelette” and you’re fine.
