1) Slice the onion and get your station ready
Slice the onion into thin rings or half-moons. Set it aside. Grab your grill pan and tongs.
Yes, you can cut the onion thicker. Yes, it will then try to escape the sandwich like a slippery coin.
2) Cook the chicken
Heat the grill pan over medium-high heat. Add 1 tbsp olive oil and lay the chicken breast in.
Cook until it’s browned and fully cooked through, about 5–7 minutes per side (depends on thickness). Flip with tongs so you don’t play “hot oil splash roulette.”
Safety note: Chicken is done when it hits
165°Finside. If you don’t have a thermometer, cut into the thickest part — it should be white with clear juices.
3) Sauce it up (without turning it into candy)
Turn heat down to medium-low. Pour in the barbecue sauce and toss the chicken to coat.
Let it bubble for 2–3 minutes until the sauce is glossy and clingy. Don’t crank the heat unless you enjoy scraping burned sugar off a pan later (ask me how I know).
4) Toast the buns
Toast the burger buns until warm and lightly crisp.
If you’re using a panini press, press them for 1–2 minutes. If you’re using a toaster, watch them like a hawk — buns go from golden to charcoal in the exact time it takes to check one text message.
5) Build the sandwiches
Stack saucy chicken on the bottom bun. Add the sliced onion (as much as your social calendar allows). Cap with the top bun.
