What to do
- Crack the eggs into a bowl. I usually go with 2 or 3 per person.
- Add a small splash of milk if you want them softer. You can skip if you like them just eggy.
- Sprinkle a little salt. Mix it all up with a fork or whisk so it's all one color.
- Put a nonstick frying pan on medium-low. Toss in about a spoon of butter. Let it melt.
- Pour in the egg mix. Wait a few seconds, then start gently stirring.
- Move the eggs around with a spatula. Scrape the bottom so they don’t stick. Keep it slow. Don’t rush.
- Once the eggs look mostly set but still a little shiny, take the pan off the heat. They keep cooking a bit after you turn off the stove.
- Give it a few more gentle stirs. That’s it. Serve right away so they stay soft.
lightbulb_2 Tips
- Use a nonstick pan if you can. Way easier to clean and eggs won’t stick.
- Keep the heat low. Eggs get tough if the pan's too hot.
- Don’t overmix once in the pan. Just keep them moving gently.
- If you want cheesy eggs, add some shredded cheese right before the eggs are done. It melts in nice.
- You can toss in some chopped herbs or even a tiny bit of pepper if you’re feeling it.
- Clean up is fastest if you rinse the pan while it's still a little warm.
