Grilled Turkey and Cheese
This is the grilled cheese’s more responsible cousin: same crispy, buttery bread, but with turkey so you can pretend it’s a balanced meal. It takes about 10 minutes, and the hardest part is not eating the cheese while you cook.

- Get the bread ready
Grab bread, butter, and a knife. Spread butter on one side of each slice — edge to edge matters, unless you like those sad pale corners. If your butter is fridge-brick hard, don’t rage—just smear what you can and call it “rustic.”
- Build the sandwich
Flip the slices so the buttered sides face out. Layer turkey and cheese on the inside. Keep the cheese near the bread so it melts fast and glues everything together—otherwise the turkey tries to escape when you flip (yes, like it has somewhere to be).
- Toast the first side
Heat a saute pan over medium heat. Add the sandwich and cook, press, and peek for 3–4 minutes until the bottom is golden and the cheese starts to soften. If the bread is browning too fast, turn down the heat—burnt bread plus unmelted cheese is a crime I’ve personally committed.
- Flip and finish
Use a spatula to flip the sandwich. Cook the second side for 2–4 minutes, still on medium, until it’s crisp and the cheese is fully melted. Press lightly (no need to smash it into a pancake… unless that’s your thing).
- Slice and eat before it goes cold
Move to a cutting board, slice, and serve right away. Give it 30 seconds so the cheese doesn’t lava-burn your mouth. Or don’t. We’ve all made choices.

Pro tip: Keep the heat at medium. Low heat takes forever, high heat burns the bread, and you end up with cold turkey and cheese that refuses to melt like it’s on strike.
Common mistake: Don’t skimp on the butter on the outside. I tried going “healthy” once. The bread came out dry and sad and everyone acted like I’d personally offended sandwiches.
Swap idea: Out of butter? Spread a thin layer of mayonnaise on the outside instead. It sounds weird, but it browns really evenly and tastes surprisingly normal. Just don’t tell your mayo-hater friend until after they take a bite.
Turkey tip: If your turkey is thick or cold from the fridge, tear it into smaller pieces so it warms fast. Big folded slabs can stay chilly in the middle, which is annoying and also kind of impressive in a bad way.
