Sausage and Peppers Sandwich
This is the classic sausage-and-peppers setup: browned Italian sausage, soft bell peppers, and onions, all piled into a warm sub roll. It’s messy in the best way, and it takes about 25 minutes if you don’t “get distracted” and wander off mid-sauté.

Instructions
1) Slice everything first (future you will be grateful)
Grab your cutting board and knife. Slice the onion into thin strips and slice the bell pepper into strips too. Keep them roughly the same size so they cook evenly — unless you enjoy that fun game where one piece is mushy and another is basically raw.
2) Brown the Italian sausage
Set a skillet over medium-high heat and add a little olive oil if your sausage is on the lean side. Lay in the Italian sausage and brown it on all sides, using tongs to turn. You’re going for deeply browned and not burned. This takes about 8–10 minutes.
If the sausage is getting too dark too fast, turn down the heat. Your smoke alarm doesn’t need to be involved in lunch.
3) Cook the peppers and onions in the good stuff
Move the Italian sausage to a plate (leave the drippings in the skillet — that’s flavor, not a problem). Add the onion and bell pepper to the skillet. Season with salt and black pepper.
Cook, stirring now and then, until they’re soft and a little golden — about 8–10 minutes. Don’t crank the heat and “speed-run” this unless you like half-charred onions and crunchy peppers (no judgment… okay, tiny judgment).
4) Finish the sausage with the vegetables
Slice the browned Italian sausage into bite-size pieces (or leave whole if you’re going full caveman). Add it back into the skillet with the peppers and onions. Toss everything together and cook for 2–3 minutes so it’s all hot and friendly.
5) Warm the sub rolls (do it, it matters)
If you can, toast or warm the sub rolls on a baking sheet in the oven for a few minutes.
Use:
350°F for 3–5 minutes
You want them warm and a little crisp, not crouton-level hard.
6) Build the sandwiches
Pile the sausage, bell peppers, and onions into each sub roll. Press it down a bit (carefully) and serve right away while it’s hot and juicy. Have napkins ready. This sandwich does not respect clean shirts.

Pro tip: If your skillet looks dry when you add the peppers and onions, add
1–2 tsp olive oil. Not a flood. Just enough to keep things glossy instead of sad.Common mistake: Don’t crowd the skillet. If it’s packed, the veggies steam and turn soft-wet instead of soft-golden. If you’re cooking for a crowd, do it in two rounds — yes, it’s annoying, but so is soggy peppers syndrome.
Pro tip: Want more bite? Use a mix of green bell pepper and red bell pepper. Green is sharper, red is sweeter. Together they’re way better than using whatever sad lone pepper is hiding in your fridge.
Funny but true: If you burn the onions, don’t try to “save it” by calling it caramelized. That trick only works on Instagram. In real life it tastes like regret.
Make-ahead move: Cook the sausage and peppers ahead, cool, and stash it. Reheat in a skillet until hot before loading the rolls. The next day it’s still really good — and you don’t have to pretend cooking at 9pm is “self-care.”
