This is the basic ham and cheese sandwich I make when I need food fast and my fridge is giving “we have nothing” energy. Spread mayo on bread, layer ham and cheese, and eat it cold—or toast it if you want that warm, slightly melty situation.

Instructions
1) Get your bread ready
Grab bread and set it on a cutting board. If you’re toasting, slide the slices into the toaster for lightly golden and still flexible—not “I forgot it and now it’s a crouton.”
2) Spread the mayo (don’t be shy)
Use a knife to spread mayonnaise on one side of each slice. Go for edge-to-edge and even coverage, unless you enjoy dry corners (no one does, but some people keep making that choice).
3) Layer ham and cheese
Add ham in an even layer, then cheese on top. Keep the stacks flat, centered, and not ridiculous—this isn’t a sandwich episode of a reality show where everything collapses dramatically.
4) Close it up and slice
Top with the second slice of bread (mayo side in). Press gently so it holds together. Then slice with the knife—diagonal if you want it to feel fancier and more adult than it actually is.
5) Optional: warm it up
If you want it hot, toast it after assembling using a toaster oven set to 375°F for 3–6 minutes, until the bread is crisp and the cheese is soft and barely melty. Don’t walk away “for a second.” That’s how we all ended up eating smoke once.
Timing: cold version takes about 5 minutes. Toasted version takes about 10 minutes total.

Pro tip: If you’re toasting, put cheese closer to the middle so it gets soft without turning the edges into sad crunchy cheese chips.
Common mistake: Don’t use a dull knife to cut the sandwich. You’ll squish everything out the sides and then pretend it was “rustic.” (I have told that lie.)
Pro tip: If your mayo is cold and tearing the bread, spread it gently and slowly. Or toast the bread lightly first so it’s a bit sturdier.
